Papa's Nachos Supreme

The finished and ready to serve nachos


Start with plating the chips and dusting them with Julio's Seasoning




Next add the browned taco beef and chorizo


Follow up with pouring the queso over the meat and chips


Next spread the tomatoes, scallions and bacon over the queso



Finish off with shredded Mexican cheese blend and chopped cilantro


Papa’s Nacho Cheese Sauce

Prep Time: 5 Minutes | Cook Time: 5 Minutes | Servings: 8


Ingredients:


1 Lbs Ground Beef

9 oz Chorizo

8 oz Tortilla Chips, restaurant style & thin

2 Tbsp Julio’s All-Purpose Seasoning

2 Tbsp Papa’s Taco Seasoning - (click for link to recipe)

2 Tbsp Oregano - divided

1 bunch Green Onions (Scallions), sliced

4 Slices Thick Cut Bacon

4 oz Sliced Black Olives

2 Roma Tomatoes, seeded and diced

8 oz Papa’s Nacho Cheese Sauce - (click for link to recipe)

¼ C + 1 Tbsp Cilantro, chopped

1 C Mexican Blend Cheese, finely shredded


Directions:


  1. Pre-heat oven to warm

  2. Plate tortilla chips and sprinkle liberally with Julio’s seasoning as you are plating. Set aside.

  3. Start browning ground beef, add taco seasoning, 1 Tbsp oregano, garlic powder. Once ground beef starts to turn brown add chorizo continue to cook, stirring occasionally. When done drain.

  4. While meat is cooking chop scallions, tomatoes. Slice bacon lengthwise into 3 strips and then chopped. When beef and chorizo is done cooking brown bacon in same fry pan until crisp.

  5. Add ground beef/chorizo to top of tortilla chips. Then pour nacho cheese sauce over the meat. Sprinkle tomatoes, scallions, sliced olives and bacon over the cheese sauce. Top all with the Mexican cheese blend.

  6. Put in pre-heated oven until the cheese topping begins to melt. Remove from oven and sprinkle cilantro over it all and serve.
