Ingredients:
1 Lbs Italian Sausage Links
1 Lbs Baby Red Potatoes
1 Large Yellow Onion
1 Green Bell Pepper
1 Red Bell Pepper
1/3 C Extra Virgin Olive Oil
1 Tbsp Fresh Basil, chopped
1 Tbsp Fresh Rosemary, chopped
1 Tbsp Fresh Oregano, chopped
1 Tbsp Fresh Parsley, chopped
1 tsp Fennel Seed, crushed
Salt and Pepper
Directions:
Preheat oven to 425°.
Julienne both peppers put in large mixing bowl.
Cut in half lengthwise and wedge the onion in 6 piece per half put in with peppers.
Quarter the potatoes add to peppers and onions.
Mix the herbs and crushed fennel together – Italian Seasoning is what I call it.
Pour olive oil over the vegetable mixture and toss. Slowly add Italian Seasoning while tossing to make sure all vegetables are covered in both oil and herbs.
Dump the vegetables and remaining oil onto large cookie sheet with sides, smooth out the vegetables to a single layer.
Salt and pepper to taste.
Poke Italian sausage with fork 3-4 times.
Place sausages on top of the vegetables and bake in over for 40 minutes.
Serve while it is hot.
