Ingredients:1 TbsOlive Oil1Yellow Onion, chopped3Large Carrots, peeled and sliced3 StalkCelery1 CFrozen Peas1CFrozen Green Beans5 CLeftover Turkey, diced12 CTurkey Broth or Stock, homemade or store bought½ tspPoultry Seasoning1 tspDried Oregano3Bay Leaf1 tspCelerly Salt1 tspBlack Pepper4 CShell Pasta, uncooked
Directions:
Cook onion in olive oil until tender, about 3-4 minutes.
Stir in carrots, celery, beans turkey, broth, poultry seasoning, oregano, bay leaf and salt and pepper. Bring to boils and then simmer 10 minutes.
Add noodles and peas and cook 10 minutes. Remove from heat, discard bay leaf. Serve with dinner rolls, toast or half sandwiches.
