Smoked Sausage, Broccoli, Bok Choy Stir-Fry

Prep Time: 20 minutes | Cook Time: 20 minutes |Servings: 6


Ingredients:


  • 2 Lbs Smoked Sausage (2 rings), biased sliced

  • 2 Tbsp Canola Oil

  • 1 Med White Onion, chopped

  • 3 clove Garlic, minced

  • 1 head Bok Choy, sliced

  • 1 bunch Broccoli, flowerets only

  • 3 large Carrots, diagonally sliced


  1. Prepare all ingredients in advance to cooking and set aside. Remove the bottom 2 inches and top 3 inches of the bok choy and discard after soaking in ice cold water for at least 10 minutes.

  2. In a wok over medium heat, sauté the smoked sausage until seared. Remove and set aside, leave in the drippings.

  3. In the drippings sauté the onions, carrots, and garlic until the onions are soft.

  4. Fold in the broccoli and bok choy, cooking until the bok choy is tender.

  5. Fold in the cooked sausage until it is heated.

  6. Serve with rice or Chinese noodles.

Chef Notes:


  • The nice thing about stir-fries is that if you have any vegetables that you need to get rid of, you can add them into the recipe. I have been known to add celery, sugar-snap peas, bell pepper, hot peppers, asparagus heads, etc.
