Papa Scott’s Ultimate Pasta Sauce

Prep Time: 15 min. | Cook Time: 1.5 hr. | Servings: 6-8


Ingredients:


  • 1 Lbs. Italian Sausage

  • 2.5 oz Tiny Pepperoni

  • 28 oz Crushed Tomato

  • 6 oz Tomato Paste

  • 2 Tbsp Extra Virgin Olive Oil

  • 1 Small Zucchini, diced

  • 2 Ripe Medium Tomatoes, skinned-seeded-diced

  • 1 Medium Yellow Onion, diced

  • 5 clove Garlic, minced

  • 5 Fresh Basil Leaves, finely chopped

  • ¼ C Fresh Parsley, chopped

  • 2 twig Fresh Oregano, finely chop leaves only

  • 2 twig Fresh Rosemary, finely chop leaves only

  • 1 Tbsp Fennel Seed, crush with mortar & pestle

  • 1 tsp Sea Salt

  • 1 tsp Ground Black Pepper

  • 1 pinch Red Pepper Flakes

Directions:


  1. In large Saucepan sauté onions until translucent, then add in the garlic until fragrance released (about 1-2 minutes.)

  2. Add in all the rest of the ingredients, except for the meat. While heating on medium-high heat thoroughly mix all ingredients. Reduce heat to low simmer for 90 minutes.

  3. While sauce is simmering, brown the Italia sausage until nearly done, then add in pepperoni. Continue to sauté until Sausage is completely cooked and beginning to turn brown.

  4. Scoop the sausage and pepperoni out with slotted spoon and add to the sauce.

  5. Continue to simmer for the balance of the 90 minute cook time.

  6. Serve over your favorite pasta. Our favorite is Penne Pasta.

  1. You can substitute thinly sliced Chicken Breast strips for the Italian Sausage
