Ham and Cheese Gnocchi
For those who do not know, it is pronounced “No-Kee”
Prep Time: 10 minutesCook Time: 20 minutesServings:6
Ingredients:
*1 TbspOlive Oil
*1 MedYellow Onion, chopped
*2 CDiced Ham
*1 CFrozen Peas
*16 oz.Gnocchi, uncooked, (1 pkg – frozen)
*1 ½ CWater
*½ CHeavy Cream
*1 CMozzarella Cheese, shredded
*1 CCheddar Cheese, shredded
*1 tspSea Salt
*1 tspBlack Pepper
Directions:
Heat the olive oil in a large skillet. Add onions and cook until tender. Add ham to skillet and cook until ham starts browning.
Add peas to skillet and stir. It’s ok if peas are frozen.
Add gnocchi to skillet, then water and heavy cream. Stir and let cook for about 5 minutes until gnocchi is tender and sauce has thickened. Season with salt and pepper.
Sprinkle with cheese on top and place skillet under the broiler for 2 to 3 minutes until cheese melts and start slightly browning.
