Baked Tomato-Basil-Balsamic Chicken Quarters

Ingredients:*4Chicken Hind Quarters, skin on*2/3 CBalsamic Vinegar*2/3 CExtra Virgin Olive Oil*1 tspPepper Corns*15Fresh Basil Leaves*10Ripe Grape Tomatoes*6Garlic Cloves Crushed* Leaves from 2 sprigs of Fresh Oregano

Directions:

Put all ingredients (except the chicken) into a Ninja Blender or a Bullet Blender. Blend on high until ingredients are liquified into a puree. Set aside.

Place chicken quarters in a self-closing 1 gallon bag. Pour the marinade over the chicken. Partially close the bag and squeeze all the air out – there may be a little spillage.

Put the chicken in the meat compartment of the refrigerator for 7 – 8 hours turning 1 time about half way through.

Preheat oven to 350˚

Put chicken on sheet pan with a wire grate. Pour the remaining marinade over the chicken – it should be fairly thick.

Bake for 45 to 50 minutes.
